Carbs on carbs... Nothing wrong with that!

So my mother came from the province of Zamboanga De Norte, in a small seaside town called Dipolog City. And what she brought home is this lovely recipe of cassava cake and chocolate swirl rice cake or "suman". Along with these delicious carbohydrate loaded goodies are fresh mangoes. Back in the day, my grandfather was named the Philippine's Mango King. He planted the sweetest most beautiful mangoes you can find in the Philippines.
Recipe for these cassava cakes:
Grated raw cassava then water squeezed out
Young mango strips (not too young, they're transparent. Get the coconut meat that is opaque but still soft)
Sugar (brown sugar works better)
What to do?
Just mix all these ingredients in a bowl then form them into spheres a little smaller than a tennis ball. Place in steamer for about 20 - 25 minutes. Serve war. I like putting salted butter on top and moscovado sugar.
